Looking for a recipe for flourless and low-calorie pancakes? I make these delicious, healthy and super easy to make banana pancakes for the kids every once in a while and they devour them! You just need a couple of ripe bananas and eggs! That’s it!

1) Crack in the eggs in a mixing bowl and whisk to combine 2) Add the bananas and mash with a fork or potato masher until the mixture is smooth, stir to combine 4. Spray a frying pan with PAM o coconut oil, cook the pancakes over a medium low heat for less than a minute. Once one side is cooked flip it over and cook for about one minute more. I have tried this before and was so surprised it tasted nice! Something I tried was to add a small handful of coconut flakes just to add some texture!

I’ve made this recipe several times and I really love it. It is so nice to enjoy these pancakes and realize that we are only using bananas and eggs. I plan on making it again soon. it is one of my favorite recipes for a light lunch or supper.
