A delicious and creamy Curried Butternut Squash Soup infused with coconut milk and flavourful madras curry powder. Savoury and easy to make.

Ingredients

  • 2 tablespoons butter or olive oil
  • 1 cup finely chopped onion
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 large butternut squashes peeled and cubed
  • 2 teaspoons madras curry powder
  • 1 teaspoon salt
  • ½ teaspoon ground cumin
  • ¼ teaspoon cayenne pepper (optional)
  • 1 can of Coconut Milk
  • Garnish with:
  • Dollop of sour cream to taste (Optional)
  • Fresh ground black pepper
  • Chopped cilantro leaves

Instructions

    1. Melt the butter in a large pot over medium heat. Add onion and garlic; cook and stir until softened and browned, about 10 minutes.
      *Make sure to deglaze any brown bits with a bit of the broth.
    2. Add the curry powder, cumin and cayenne pepper and stir for 1 minute (this activates the spice)
    3. Stir in the rest of the broth, coconut milk, squash, and salt, and bring to a boil. Reduce the heat to low and simmer until squash is tender, about 15 minutes. Remove from the heat.
    4. Purée soup with an immersion blender until smooth.
    5. Ladle soup into serving bowls and top with a sour cream dollop.
