Today, I am sharing a Delicious Chicken Fried Rice Recipe with you. This is the perfect meal for busy weeknights when you want something hearty but only have a little time to cook.
It is especially easy to make using leftover rice and already-cooked chicken.
Sometimes, I get a rotisserie, make some chicken sandwiches for lunch for the family, and save the rest for this recipe.
I love that this is a complete meal in one pan, packed with tender chicken, fluffy rice, and vibrant veggies.
The best part? You can easily customize it with the ingredients you have on hand, making it a great way to use up leftover rice or vegetables.

Tip: The rice has to be cold to fry properly. If you don’t have leftover rice from the day before, make sure you cook the rice early in the day and leave it in the fridge to fully cool down before you make this meal.

Delicious Chicken Fried Rice Recipe
This easy one-pot recipe is great to make when you have left over cooked rice and chicken. It is savoury and delicious and the entire family will ask for seconds.
Ingredients
- 1 tbsp of olive oil
- 3 large eggs, beaten (add salt and pepper to taste)
- 4 cups of frozen stir-fry vegetables or fresh veggies (snap peas, carrots, broccoli, sweet corn)
- 1 tbsp of mild curry powder
- 3 cups of cooked rice (leftover rice preferable; it must be cold; cook early in the day and leave it in the fridge to cool down)
- 2 roasted chicken breast (shredded) / rotisserie chicken works wonderfully
- 3 tbsp of low salt soy sauce or coconut aminos
- 2 tbsp of ketchup
Instructions
- Heat olive oil over medium heat in a large frying pan.
- Add the eggs, scramble and cook for a few minutes. Remove from the pan and chop into small pieces (set aside)
- Add some oil to the same pan, one tbsp of water, mild curry powder, and the vegetables. Cook for 3-5 minutes until vegetables are defrosted. Once done, remove fron the pan and set aside.
- Dry the frying pan, add a splash of oil and the rice. Fry for a 1-3 minutes, then add the chicken and mix well until warm. Add soy sauce, ketchup and mix well, cook for 2 more minutes.
- Add the eggs and vegetables and mix well, until hot.
- Serve warm and enjoy!
