Chicken

This has been a family favourite for many years. The only thing I don’t like about it is that it can use a bunch of dishes and takes a bit to prepare. This is why I do a bunch at once. This time I made two at once. One to eat that day, and one to put in the freezer for another day. Next time chicken goes on sale I will probably do three or four at once. It takes about 20 minutes to prep (if you cook everything at once). You can change it up by using different flavored noodles or cream soups. We use butter & herb noodles as it’s the kind that everyone likes. I put in Cream of Chicken soup this time. I have tried Cream of Mushroom in the past. You can also change the veggies. This time I did 1.5 cups of corn and 1.5 cups of pea/carrot mix. This gave a good variety of vegetables throughout.

Chicken and Noodles Casserole Recipe

Ingredients

  • Boneless Skinless Chicken Breasts (2-3 per casserole)Lipton Sidekicks Noodles (Any flavor) (one per casserole)
  • Can cream soup (any flavor)
  • Frozen veggies (1-2 cups per casserole)
  • Stove Top Stuffing (1 per casserole)

Instructions

  1. Chop chicken breasts into bite size pieces and cook.
  2. Cook Noodles as per directions on box
  3. Cook Frozen Veggies (I use the microwave during this step)
  4. Cook stuffing as per directions
  5. Mix the can soup, chicken breasts, and frozen vegetables together and put in bottom of your casserole dish. Next, you layer over the cooked noodles. Top with Stuffing. This can be frozen or cooked immediately. If cooking right away it only needs to go in long enough to warm the soup as everything else is cooked. Otherwise warm at 250 degrees for 45minutes to 1 hour from frozen.
