The boys love popsicles and we often buy boxes of fruity yogurt ones at the store. Last week my parents got us a set of plastic molds to make them ourselves at home and I have been trying different fruit mixes with the boys. It turns out that making them at home is super easy and fast, you also have full control of the ingredients.
We made Banana Coconut Popsicles this week and they were a total hit, the perfect summer treat!

1) Mix the coconut milk, bananas, honey and vanilla extract in a food processor or blender until smooth. 2) Divide the mixture among the popsicle molds. 3) Freeze for at least 5 hours or until completely frozen. 4) Enjoy! Icepop molds are the best – we always had homemade when I was a kid, although I remember the mold being about a 1/3 of the size! 😉 Those guys are so darn cute.

My favourite ice-cream is still white chocolate – the best is found in Sydney, Australia at Mövenpick. I did use to enjoy a banana split at a certain ice-cream parlour, which was later closed down by the health authorities!
