During the cold months of the year, I love making hearty, savoury soups. I used the Instant Pot to make this recipe, and it turned out delicious. Super quick to clean after as well.
You put everything in the Instant Pot, leave it, and you’ll have the perfect comfort food dinner.
I love making enchilada sauce from scratch for this meal, but you can always buy an already made jar if you want to save time.
I also enjoy making fresh, crispy tortilla strips. You can save time and buy a bag of tortilla chips to use instead if you are short on time.
I love this meal because you can get creative and add and remove ingredients as you wish. You can even make it vegetarian without the chicken if you want to. I find the chicken adds to the flavour, so we love it in the soup.
Pickled jalapenos are also my preferred choice over fresh jalapenos, just because they are milder and not as spicy.

Delicious Instant Pot Spicy Chicken Tortilla Soup Recipe
Ingredients

4 tbs of olive oil
-
1 onion, chopped
-
1/2 cup of pickled jalapenos (drained)
-
1 clove garlic, minced
-
3 skinless chicken breasts
-
1 tsp cumin
-
1/2 tsp kosher salt and pepper
-
1 1/2-2 cups low-sodium chicken broth
-
1 can if white kidney beans (rinse)
-
2 cans of navy beans (rinse)
-
1/4 lime juiced
-
1 pack of 6" corn tortillas (cut into strips)
-
2 cups enchilada sauce
-
FOR ENCHILADA SAUCE:
-
1/4 cup vegetable oil
-
2 tbs self-rising flour
-
1/4 cup chili powder
-
1 small can tomato sauce
-
2 cups of water
-
1/4 tsp ground cumin
-
1/4 tsp garlic podwer
-
1/4 tsp onion salt
-
salt to taste
-
TO GARNISH:
-
Fresh cilantro chopped
-
Avocado
-
Shredded cheese
-
Sour cream
-
Lime
Instructions
- Start making enchilada sauce. Heat oil in a skillet over medium-high heat. Stir in flour and chili powder, reduce heat to medium, and cook until lightly brown, stirring constantly to prevent mix from burning.
- Gradually stir in tomato sauce, water, cumin, garlic powder, and onion salt into the flour and chili powder until smooth, and continue cooking over medium heat for approximately 10 minutes, or until slightly thickened. Season to taste with salt.
- While the enchilada sauce is cooking make the tortilla chips. Add 3 tablespoons of olive oil to a medium/large size frying pan, and heat over medium-high heat.
- Add tortilla strips and fry until they are crisp, watch to make sure they don't burn. Set aside.
- Grab your Instant Pot, add the onions, pickled jalapenos cumin, salt, and garlic to the pot.
- Add chicken breasts and pour over the enchilada sauce you made, plus 3 cups of broth. Stir everything. Cover pot, set to "sealed" and pressure cook on manual for 15 minutes.
- Once the 15 minutes are done, release the steam, open the lid, remove the chicken and shred it with two forks, add it back to the pot.
- Add the beans to the pot, mix well, and set to slow cook on HIGH for 1 hr, make sure you leave it "venting".
- Once done add lime juice, serve into a bowl, top with your preferred garnish, tortilla chips, avocado, cheese, cilantro, lime.
- ENJOY!
