The holiday season is one of my favourites. There are so many delicious treats to enjoy, including wonderful Christmas Cake!
Today I am sharing a Delicious Light Christmas Cake Recipe passed by my Mother-in-Law. She has been baking these cakes for years, with her mother for many years, and I have enjoyed her cakes every Christmas.
This year, she showed us how to make the cake, and I was very excited to learn how to make it. It was also fun to have our youngest join in and help make the cake as well, and he enjoyed snacking on the candied fruits!
This cake is dense and rich, and looks like a beautiful mosaic when sliced, with beautiful, colourful fruits and nuts in every bite. You can sprinkle your cake with brandy if you wish or leave it alcohol-free. Our recipe contains no alcohol.
It is recommended to make this cake early, several weeks in advance, to allow time to mature. We made it this weekend, hoping to enjoy it closer to Christmas.
Fruit cake can be wrapped in plastic and then in aluminium foil, and you can freeze it for up to 3 months.

Delicious Light Christmas Cake Recipe
This delicious Light Christmas cake has a wonderful buttery taste studded with beautiful dried mixed fruits. The perfect festive blend of Christmas flavours! 1. Line cake pans with 2 thicknesses of heavy paper. Grease well. 2. Sift flour, measure and sift again with salt and baking powder. 3. Juice and grated rind of one lemon. 4. In a large bowl combine fruits, nuts, and lemon rind, dust with a sprinkle of measured flour. 5. Cream butter until creamy and light. Add sugar, beating between additions. Add eggs, unbeaten, one at a time, beating each one in thoroughly before adding next. If mixtures curdles, add a little measured flour, then continue to add eggs. Add dry ingredients gradually, beating between additions. 6. Add lemon juice, fruits and nuts. Mix well. 7. Fill pans 2/3 full. 9. Leave cake in the pan until cold, then remove and wrap well, store in a cool place. ENJOYDelicious Light Christmas Cake Recipe

8. Bake 275 F for 3 to 3 1/2 hours. Once done, a toothpick inserted into the centre of the cake should come out clean
