A delicious ripe plantain lasagna—a quick, easy, and delicious recipe.

Ingredients

  • 1 tbs olive oil
  • 5 ripe plantains
  • 1 white onion sliced in small cubes
  • 1 green bell pepper sliced in small cubes
  • 1 lbs ground beef
  • 2 cloves of garlic minced
  • 300 grams shredded cheese
  • 1 jar of marinara sauce
  • salt and pepper to taste

Instructions

    1. Heat over to 150°C (300°F)
    2. Peel the ripe plantains and lightly fry them in a pan with a small amount of oil until golden on all sides. Set aside.
    3. In the same pan, cook the onion, garlic, and bell pepper until fragrant, seasoning with salt and pepper. Add the ground beef and cook until brown.
    4. Add marinara sauce and let it simmer on low for about 6 minutes
    5. Flatten the plantains with a cutting board, then cut and place as first layer in the baking dish.
    6. Add a layer of the ground beef sauce, followed by a layer of shredded cheese.
    7. Repeat with another layer of plantains, more meat, and finish with cheese on top.
    8. Bake in the oven for about 20 minutes at 150°C (300°F), or use an air fryer for 15 minutes.
