Get ready to shake up your dinner routine with a delicious Plantain Lasagna!
My sister is visiting this weekend, and we decided to make this delicious recipe together—a Latin-inspired twist on classic Italian comfort food!
This recipe has sweet, caramelized layers of golden plantains instead of pasta noodles.
The balance of sweet and savoury flavours is satisfying, whether layering it up with seasoned ground meat or a hearty blend of beans and veggies for a veggie-packed version.
This dish is perfect for family weekends or even meal prep, delivering big on flavour.
What makes this lasagna truly special? The plantains! These tropical beauties add a natural sweetness that caramelizes in the oven, creating a mouthwatering blend of flavour that’ll keep everyone coming back for more. We all had seconds tonight!
Plus, plantains are loaded with vitamins A and C for immune support, glowing skin, and fibre and potassium to help with digestion and steady energy levels. And unlike bananas, they’re lower in sugar, making them a fantastic addition to savoury meals.
Whether you’re already a plantain lover or this is your first taste, plantain lasagna combines the comfort of lasagna with a fresh, delicious twist. Give it a try—it just might become your next family favourite!
