Ingredients

1 teaspoon coconut oil

1/2 yellow onion, chopped

2 cloves garlic, minced

1 tablespoon of curry powder
-
1 can coconut milk
-
1 tablespoon of soy sauce
-
1 tablespoon pure maple syrup
-
2 small purple yams or sweet potatoes , chopped
-
1 small zucchini, chopped
-
2 carrots, chopped
-
1/2 a head of broccoli, chopped
-
1 cup quinoa or rice, rinsed
-
2 cups water
Instructions
- Cook the quinoa or rice following packaging instructions.
- Melt the cocunut oil in a salute pan over medium heat, add onions and garlic and salute until fragrant for about 5 minutes.
- Add the coconut milk, curry powder, soya sauce and maple syrup and combine, bring to a boil.
- Bring the sauce to a simmer and add the yam or sweet potatoes, cover the pan and steam in the sauce for about 10 minutes.
- Add the rest of the vegetables, coat them with the sauce, cover and steam until fork-tender.
- Serve over quinoa or rice and enjoy!
This recipe was a hit last night and it was very easy to make!
