Who doesn’t love muffins? Here’s a fun way to “disguise” a healthy omelet packed with veggies and protein. Sure to be a hit with the whole family.
My boys both love these and I love the fact that they get to eat some eggs filled with good stuff and veggies like spinach!

Eggs in any shape or form are wonderful and for many years I was only allowed one or two a week because it was thought they bad for me due to high cholesterol. Thank goodness that has now changed as I love my eggs and they are very healthy. Egg yolks are one of the most nutrient-dense, antioxidant-rich and vitamin-laden foods on the planet!
