We love baking with the boys on the weekends. Today we made one of our favourite cookie recipes: The Best Oatmeal Raisin Cookies. We have been making these for years, and they are super easy to make and so delicious. Soft and chewy and full of yummy goodness.

I’ve wanted to share the recipe here for a while, and I am finally doing it today.

Are you a fan of Oatmeal Raisin Cookies too? For this recipe, we avoid using cinnamon and nutmeg. I know some recipes use those, but I love the oatmeal taste, and I feel adding those other strong flavours changes the final results.

Something else we do, and this is an important step, is to soak the raisins for a bit before they go into the cookie mix. They don’t have to soak for hours in advance, but I find that soaking them makes them softer, and they taste better in the cookies.

For the walnuts, I recommend crushing them into tiny pieces, or you can crush them into dust if you want to hide them from picky eaters.

Ingredients

  • 1 cup of unsalted butter, softened
  • 1 cup of brown sugar, packed
  • 1/2 cup white sugar
  • 2 large eggs
  • 1 1/2 cups of all-purpose flour
  • 1 tbs of vanilla extract
  • 3/4 tsp salt
  • 1 tsp of baking soda
  • 1 1/2 cup of raisins (soaked in water for 15 min)
  • 1/2 cup chopped walnuts (crushed to dust if you want to hide)
  • 3 cups of rolled oats

Instructions

  1. Preheat oven to 350F, grease two large baking sheets.
  2. Soak raisins in cold water (10-15 min ideally)
  3. If you are using a mixer, add the butter to the mixer and beat until creamy. Otherwise, use a large mixing bowl to beat the butter.
  4. Add brown and white sugar to the mix, beat for a few minutes, until fluffy.
  5. Add eggs, and mix well. Add vanilla extract, mix well.
  6. In a separate medium bowl mix the dry ingredients: flour, salt, baking soda.
  7. Stir the dry ingredients into the mixer with the sugar and eggs mixture.
  8. Drain the raisins and stir in.
  9. Add the walnuts and mix well.
  10. Stir in the oats and mix well.
  11. Use a spoon to scoop the cookie dough onto the greased baking sheets. Leave some space between each of the cookies.
  12. Put in the oven and bake for 18-20 minutes depending on cookie size. They will come out looking soft but they will firm up as they cool down.
  13. Once they are out of the oven, let them cool for a minute and transfer them to a wire rack to cool completely.
